Almond Shortbread Bars Recipe

Shortbread
2 cups flour
½ cup plus 2 tbsp sugar
1 cup salted butter, softened

Almond Icing
1 cup powdered sugar
1/4 tsp almond extract
Almond milk

Instructions

Preheat oven to 350 degrees. Line a 9×13 baking dish with nonstick aluminum foil.
If butter is not soft, place it in a microwave-safe glass bowl and microwave for 15–20 seconds.

With a mixer, cream butter and sugar. Add flour and mix until combined.

Spread the mixture into the baking dish. It may not cover the entire dish.

Bake for 30 minutes or until the center is cooked through.

Cool, lift the foil from the pan, then slice into 1-inch squares.

Add almond milk to the powdered sugar, a little at a time, until you reach a smooth, frosting-like consistency. Add almond extract and mix well.

Spread the icing over the cooled shortbread and allow it to set. The icing will firm up as it cools. Store at room temperature in an airtight container.
