How to Serve up a Summer Salad Everyone Will Love

By Grace Barker

Whether you’re hosting a neighborhood block party or sending out a group text to gather your closest friends, serving up a delicious summer salad is a surefire way to be the hostess with the mostest.

A refreshing and vibrant salad is the ultimate table addition, especially to complement this North Carolina heat. But so often they turn out underwhelming and unappetizing, getting overlooked in any delicious spread.

Fortunately, there are a few small ways to elevate any bowl of greens, improving both the flavor and the look. No more wilted lettuce or untouched bowl of overpriced veggies. With these simple tips, you’ll create the ultimate refreshing appetizer that every guest will leave raving about.

Dress to impress

Striking the right balance with the dressing is the key to impressing guests with your salad skills. You want to find the balance of both the right amount and the right consistency. Too much dressing and your leaves get buried at the bottom of the bowl. Too little dressing and the kale tastes quite similar to the very ground it’s grown in.

Do yourself a favor and grab a mason jar to prepare your dressing ahead of time. Then dress just before serving—or, better yet, set it aside and let your guests do the drizzle themselves.

Remember, the goal is to dress to impress all of your guests and cater to their their many preferences.

Power in pairing

Crispy spinach, smooth butter lettuce, leafy kale, fiber-rich cabbage, and spicy arugula—so many greens to choose from! The key is to pair them with toppings and dressings that elevate the flavor of each ingredient instead of drowning it out.

Butter lettuce pairs beautifully with a creamy avocado dressing. Top with charred green beans, hard-boiled eggs, and bright red cherry tomatoes.

Mixed greens are best enjoyed with a light apple cider vinaigrette, roasted sweet potatoes, and crunchy nuts on top for a refreshing yet satisfying dish.

Kale is the perfect vehicle for an olive oil-based lemon Dijon dressing massaged right into the leaves. Top with fluffy quinoa, salt & pepper chickpeas, and roasted pumpkin seeds for a balanced flavor.

Cabbage is an antioxidant-rich green that pairs beautifully with a creamy Caesar dressing. Topped with refreshing cucumbers, high-protein edamame, fluffy quinoa, and fresh dill makes for a delightful, protein-forward salad.

Balanced & beautiful

Creating a nourishing and delicious salad is about more than just the dressing or greens—presentation matters, too.

Select a vessel that perfectly fits your ingredients, leaving little open space, to make the salad feel more abundant and full. Then chop your mixed greens, making it easy for guests to enjoy while balancing a cold drink and light conversation.

Place your heavier ingredients, such as grains and beans, before adding on seeds, herbs, and other final touches. To finish, I prefer to leave the salad unmixed, allowing guests to view the colorful ingredients before choosing what they would like.

Now, you’re well on your way to creating an easy yet elevated summer salad for your next gathering! Before you know it, you’ll be serving something both nourishing and delicious on a hot summer’s day. And your guests will definitely be texting you to request the recipe.
